How to Use Your Rotisserie Chicken: Delicious Ideas and Recipes

Rotisserie chicken is so delicious all on its own it may seem strange why you should use it in a recipe. However, one of the many great things about this dish is that there are usually some leftovers. Even if you only have the bones left, you can use those for making delicious stock.

The following are just a few of the ideas of how you can put rotisserie chicken to good use. Bear in mind that some of these recipes are so delicious, you will be tempted to invest in a rotisserie oven and start making that delightful chicken regularly just to enjoy those dishes.

Cheesy Buffalo Chicken Dip

If you only have a little of meat left over from your meal, you can make a delicious dip. Shred the chicken meat and mix it with your favorite cream cheese. Add some hot spices, sour cream, and more melty cheese along with scallions and some buffalo sauce.

Mix it all and serve the dip with crackers, crisps, and veggies. The dip should stay good for 3-5 days in the fridge. And you can freeze it too!

Broccoli Parmesan Chicken Soup

If you are looking for something fancy and amazing, this soup will be it. Rotisserie chicken enhances its flavor in a truly unique way.

Ingredients:

  • 2 heads of broccoli
  • 2 cups shredded rotisserie chicken
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 4 cups chicken broth
  • 3 cups baby spinach
  • ½ cup grated parmesan
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Salt and pepper

Cook onion and garlic until golden. Add steamed broccoli florets to the pan and season with salt and pepper. Cover the pan and let it all simmer for about 3 minutes.

Then, add broth and spinach and simmer some more (up to 10 minutes). Add parmesan, lemon zest and juice and blend until smooth. Stir in the rotisserie chicken and enjoy.

Chicken Pan Nachos

This is a true treat made from party leftovers.

Ingredients:

  • 7 cups tortilla chips
  • 4 ounces Cheddar cheese
  • 2 ½ cups shredded rotisserie chicken
  • ½ avocado
  • 1 can black beans, rinsed (15 oz.)
  • ¼ cup fresh lime juice
  • 1 tablespoon olive oil
  • 1 jalapeno (sliced)
  • 1 bunch chopped cilantro stems
  • ¼ cup cilantro leaves
  • 6 sliced radishes

Toss together chips, half the Cheddar, beans, and chicken and spread the mix on a baking sheet carefully. Then, sprinkle the rest of the cheese on top and bake at 450F until cheese melts.

Meanwhile, mix together cilantro stems, lime juice, and avocado and puree everything with a blender. Add water as necessary to make a smooth paste.

Drizzle the avocado paste over your baked cheesy nachos and sprinkle radishes, jalapeno, and cilantro leaves on top.
